Country Quiche

Eggs, cheese, ham, bacon, and onion all baked together in a creamy custard in a deep dish pie shell to create this delicious Country Quiche. So hearty, flavorful, and an easy meal the whole family will love.


You can really add anything to this quiche recipe; other vegetables, different meats, or seasonings. But ham, bacon, and cheese is our favorite way to do it and what my whole family likes.

Quiche is a great brunch recipe! But it is definitely not limited to just brunch! We love it for any meal of the day. We really love breakfast in general for any meal. Plus all my kiddos eat breakfast meals really well. They also like this Farmer's Omelet a lot too!


This Country Quiche recipe starts with a parbake on the deep dish pie crust. Prick the pie crust a few times and then place in the oven for 5 minutes to start off the recipe.

In the meantime, melt the butter in a small skillet on the stove and cook the onions for 2 to 3 minutes, so they have a translucent look.

After the crust is done, remove it from the oven and set aside.

Then it is time to all the ingredients for the custard filling. So using a medium bowl, add the heavy cream, the eggs, garlic salt, pepper, and ground mustard and mix well together. Add the cooked onions into the custard blend and mix them in.

Next it is time to put together the quiche. So add a layer of half the bacon, ham, and cheese in the parbaked pie crust. Then add half the custard mixture. Then repeat with the layers with the other half of the ingredients.

Place on a baking sheet incase of any spillage while baking and place in the oven. Bake for 10 minutes at 375F. Then reduce heat to 350F and bake for an additional 30-35 minutes.

Let the Country Quiche set and slightly cool for about 30 minutes before serving.



Country Quiche

Ingredients for Country Quiche

1 9 inch deep dish pie shell
3 green onions, thinly sliced
2 Tbsp butter
4 oz. diced ham
1 lb bacon, cooked and crumbled
1 1/2 cup cheddar cheese
1 cup heavy cream
6 eggs
1 tsp garlic salt
1/2 tsp black pepper
1/4 tsp ground mustard

Directions for Country Quiche

1. Using a fork, prick the bottom of the deep dish pie shell. Bake for 5 minutes at 375F. Remove and set aside. 

2. Melt the butter in a small skillet. Cook the onion for 2 -3 minutes in the butter. 

3. In a medium mixing bowl, whisk together the heavy cream, the eggs, the garlic salt, the black pepper, and the ground mustard until fully combined. Add the cooked onions to the mixture and stir together. 

4. Layer half the bacon, half the ham, and half the shredded cheese in the deep dish pie shell. 

5. Pour 1/2 the custard mixture evenly over the first layer of bacon, ham, and cheese. 

6. Repeat steps 4 and 5. Layer the rest of the bacon, the rest of the ham, and the rest of the shredded cheeese. Then pour the remaining custard evenly over to top of the quiche dish. 

7. Place on baking sheet in case of any spill over. Bake for 10 minutes at 375F. 

8. Reduce oven temperature to 350F and cook for an additional 30-35 minutes. 

9. Rest to cool on a wire rack for about 30 minutes before serving.

Spring is finally here and things are getting super busy on the farm. After an extended winter this year, everyone is eager to get in the field and outside. Field work, yard work, gardening season, and Spring cleaning all are what we spend a lot of our time once that nice spring weather finally hits. We like to wake up and get started on things right away. Occasionally in our house, we don't have any weekend plans, but just to work around the house. We love eating brunch!

It's perfect to have a full brunch meal a little later in the morning and then just get busy with our weekend plans until dinner time.

Holidays are even better when you serve something special, like a brunch meal, and a special holiday is coming up! Mother's Day! No two moms are alike, but all deserve to be celebrated. What a great way to treat the mother's in your life by honoring them with a delicious brunch meal.

Farmer's Omelette


What better way to start your day than with a delicious omelette! We love omelettes for breakfast! Any meal really!


Our family have a different kind of prepared egg often. From scrambled eggs, to eggs over medium, to omelettes everyone in my family has their favorites.

We have a chicken coop full of chickens and the kids love to go out and gather up the eggs.

And there is just something about a bowl full of fresh eggs in all different shades of colors that I love!! Backyard chickens for the win!!


We really love omelettes and different combinations of flavors that you can incorporate in them, but this recipe is probably my favorite combination.

My favorite and go-to combination is this recipe with ham, tomatoes, spinach, chives, and cheese.


I especially like it during the gardening season and we can use fresh produce straight from our garden.



Farmer's Omelette



Ingredients for Farmer's Omelette: 


2 eggs
1/8 cup milk
1/2 teaspoon Clabber Girl Baking Powder
1/4 cup diced ham
1/4 chop spinach leaves
1/4 cup chopped grape tomatoes
1/4 cup shredded cheese
pinch of green onions

Directions for Farmer's Omelette:

Using a greased pan add the ham, spinach, tomatoes, and green onions and start to saute on a low-medium heat.
In a small bowl combine the eggs, milk, and Clabber Girl Baking Powder and whisk together until well blended.
Then add the egg mixture to the pan with the meat/vegetable mixture. Move pan around so egg mixture is evenly spread.
Cook until bottom side is slightly browned and eggs are not runny. The top of the eggs will get some bubbles.
Add shredded cheese on one side of the top of the circle.
Gently fold over one side once. Flip omelette and cook thoroughly.
Place cooked omelette on plate and top off with extra sprinkle of cheese and green onions.

The egg, spinach, ham, tomato, and green onions combination is my favorite for breakfast creating a delicious farmer's omelette!

French Pancakes, A Rumford Complete Cookbook Recipe

A tasty breakfast recipe is something I always look forward to! Our family's schedule is super busy, but on slow weekends we love a tasty hearty breakfast.


Add some sweet preserves to the center, roll them up, and sweeten with delicate powdered sugar to top off the dish!


Perfect.

Delicious.

The recipe starts with a simple batter, poured into just the bottom of the pan, and cooked for a thin pancake.

I put up some apple preserves/pie filling that I generally use for my apple turnovers for the middle of the french pancakes and oh so yummy they were!

The French Pancake recipe is on page 130 of the Rumford Complete Cookbook from 1908.


Here is my version:



French Pancakes, A Rumford Complete Cookbook Recipe 

Ingredients:
1 cup flour
1 teaspoon Rumford Baking Powder
1/2 teaspoon salt
2 eggs
1 cup milk
Preserve - any flavor you'd like (I used apple)

Directions:
Combine the flour, salt, and baking powder together in a bowl. In a separate bowl beat the eggs with the milk and add to the dry mixture in the bowl. Using a small pan and spray it before each pancake, pour some batter in just enough to cover the bottom. Cook golden brown then flip and cook the other side. Spread the preserve and roll up . Sprinkle with powdered sugar before serving.
